Uji Aktivitas Antoksidan dan Senyawa Fitokimia pada Tanaman Terung Pokak (Solanum torvum)

Abstract

Buah terung Pokak di Indonesia cukup melimpah sebagai tanaman liar . Tujuan riset untuk menguji aktivitas antioksidan dan fitokimia tanaman terung Pokak. Metode analisa secara kuantitatif meliputi DPPH dan fitokimia. Hasil analisa sebagai berikut, buah : Kadar air 82,2%, kadar abu 1,64%, protein 9.77%, lemak 4,63%, karbohidrat 4,54%, Vitamin C 3,78%, fenol 33.95 mg/g, Tanin 0.94 mg/g, Flavonoid 1,38 mg/g, DPPH 85,58%. Biji : kadar air 39,90%, kadar abu 1,16%, protein 6.22%, lemak 0,48%, karbohidrat 52,97%, Vitamin C 2,46%, fenol 21,84 mg/g, Tanin 0.52 mg/g, Flavonoid 2.32 mg/g, DPPH 86,88%. Batang kering : kadar air 6,88%, kadar abu 7,92%, protein 14,28%, lemak 6,90%, karbohidrat 64,02%, Vitamin C 0,13%, fenol 92,14 mg/g, Tanin 1,61 mg/g, Flavonoid 8,04 mg/g, DPPH 78,47%. Kulit : kadar air 58,16%, kadar abu 0,26%, protein 5,74%, lemak 0,3%, karbohidrat 35,29%, Vitamin C 1,34%, fenol 25,53 mg/g, Tanin 0.53 mg/g, Flavonoid 2.76 mg/g, dan DPPH 85,49%. Daun Segar : kadar air 58,16%, kadar abu 0,26%, protein 5,74%, lemak 0,32%, karbohidrat 35,29%, Vitamin C 1,3%, fenol 25,53 mg/g, Tanin 0.53 mg/g, Flavonoid 2.76 mg/g, DPPH 85,49%. Daun Kering : kadar air 7,55%, kadar abu 7,52%, protein 25,8%, lemak 3,67%, karbohidrat 50,52%, Vitamin C 1,31%, fenol 12,87 mg/g, Tanin 0.20 mg/g, Flavonoid 1,76 mg/g DPPH 64,50%.
