Abstract

Post-harvest losses of local food commodities in Aceh remain a significant challenge, adversely affecting farmers’ incomes and regional food security. This study aims to evaluate the effectiveness of post-harvest processing technologies in minimizing losses and enhancing the added value of local food commodities, such as rice, coffee, cocoa, and vegetables. The research employs a descriptive method with both quantitative and qualitative approaches, utilizing secondary data sourced from government reports, academic literature, and previous studies. The findings indicate that the implementation of drying, vacuum packaging, and low-temperature storage technologies can reduce post-harvest losses by 20–35% and increase the added value of products by up to 43%, particularly for coffee and cocoa. Moreover, post-harvest technologies contribute to increasing farmers’ incomes, stabilizing local food supply and prices, and reducing dependence on intermediaries. Nevertheless, the adoption of these technologies remains constrained by farmers’ limited capital, knowledge, and capacity. This study recommends enhancing access to technology, providing training and mentorship for farmers, offering financial support, and conducting further research on product diversification to extend the shelf life and economic value of local food products. These findings have important implications for the development of sustainable post-harvest management strategies in Aceh.
