This research is an exploratory study that aims to determine the physical characteristics of ayurvedic tea at PT. Eternal Karsa. The raw materials of ayurvedic tea herbal tea observed in this study were roses, fragrant pandan leaves and citronella leaves. The methods used in this study are sorting, blanching, drying, color intensity testing and moisture content testing. The results showed the color intensity of L, a*, b* in wet raw materials, namely roses 61,89, 25,55, 1,58, pandan leaves 64,76, -44, 83, 63,42 and citronella leaves 67,15, -15,18, 23,81. Dry raw materials before blanching have color intensity L, a*, b*, namely roses 30,12, 25,68, -6,78, pandan leaves fragrant 31,63, -5,14, 16,71 and citronella leaves 60.51, -3.65, 25.34. Dried raw vegetables after blanching have color intensities L, a*, b*, namely roses 36,31, 32,65, -13,56, pandan leaves 41,47, -15,57, 20,27 and citronella leaves 69,47, -8,51, 18,86. The moisture content obtained by each raw material is, rose flower 7,67 %, pandan leaf 7,86 % and citronella leaf 7,55 %. The color intensity of wet raw materials indicates the raw materials used in good conditions. The color intensity of dry raw materials after blanching the color can be maintained. And by testing using gravimetric methods, the water content of ayurvedic tea herbal tea is within the company's standard range, which is < 10%.
